Hand-picked and pressed from Arbequina olives of the Siurana appellations in Catalunya, Arrels extra virgin olive oil is another proud import brought by Hirigoyen and his friends. Famous for its dense and fluid quality of character, Arbequina olive oil bears a well-balanced almost fruity flavor that is pleasing to even the most discerning of palates. Chef Hirigoyen recommends drizzling it on your favorite salads.

After the production of “The Basque Kitchen,” the Hirigoyens realized that they would make one of Gerald’s secret ingredients widely available, and formed IGO Foods to import the veritable Piment d’Espelette. Made solely from native red peppers grown in the tiny village of Espelette, in the heart of the French Basque region, this inimitable spice is often used at the table in lieu of black pepper. Its rich aroma and gently spicy, fragrant character lend a magical depth of flavor to countless dishes.
